vegan piña colada ice cream
I have to say, this is probably the best thing I've ever made. It's healthy, it's vegan, and best of all it's easy! I'm a major ice cream junkie and this little experiment really scratched my itch. I hope you enjoy it too!
What you need:
- 2 cups frozen pineapple
- 1/2 cup chilled coconut milk (I used Thai Kitchen coconut milk)
- 1/2 avocado
- 1/2 cup water
- 3-5 ice cubes, as needed
Blend to desired consistency and enjoy! You can also pop it in the freezer for an hour if you want to firm it up before serving!
